in portland is pure, delectable genius. i’m pretty sure his waffles are what waffles in heaven will taste like.

they are bigger than the standard waffle and come with a variety of toppings. nutella, ham and cheese, etc. my favorite is sweet cream and butter, so simple, so good. he serves them folded in half, so when i get mine i always open it just a little to peak inside. the pools of butter swirling with the sweet cream smell amazing and my waffle is always gone in 2 minutes flat.

the waffle man knows his stuff, so make sure you make a pit stop to see him the next time you are in portland. eat an extra one for me!

after a hectic, busy, crazy, fast-paced, (i love using the thesaurus) summer, i am slowly tearing down the busy blocks of my life so i can reorganize, re-structure and re-stack them. i am setting aside most of those busy blocks to be picked up again later, or maybe never. my goal for the next few months is to focus on the most important: God, family. period. that’s it. so whatever i do, whatever blocks i chose to build with, must by foundational to said items.

it feels good and right to be doing this. it’s good to bow out every now and then.

i spent most of the day yesterday making apple pies and apple sauce with the 20 lbs of apples we got at green bluff. so today is peach day.

i think i’ll make some peach pies, peach cobbler, peach fried pies, and freeze the rest for future use. i love stocking my freezer.  it makes me feel so Little House on the Prairie-ish, like i’m stocking up for the winter, ready for anything that happens.
